Making Vegetarian Puerto Rican Food: Pinon

Ingredients:

  • 1 package of MorningStar Grillers Crumbles
  • 1 packet of Goya Sazon
  • 1 tablespoon Goya Recaito
  • 1 small can of tomato sauce
  • 1 tablespoon of Adobo
  • One-half cup of Ragu Traditional sauce
  • 2 pounds of five cheese blend
  • 5 plantains
  • One-third cup of vegetable oil

Instructions for the MorningStar Grillers Crumbles:

  • Place the meat in a pot with water at medium to high heat.
  • Once completely cooked add Goya Sazon, Goya Recaito, the can of tomato sauce and Adobo.
  • Stir the mixture until all elements are evenly blended.

Cooking of the Plantains:

  • Cut into the skin of the plantain, but not all the way down, so that there is an insert for fingers to peel away the skin.
  • Cut the plantains longwise to create strips to layer for the dish.
  • Fry them in vegetable oil in a frying pan at medium to high heat until soft and golden brown (these are good to snack on).

Construction Process:

  • Layer the bottom of a glass dish with the cooked plantain strips.

  • Apply a layer of Ragu Traditional sauce on top of the plantains.

  • Add the cooked MorningStar Grillers Crumbles.

  • End the layer with cheese.

  • Repeat steps for construction until at the final layer.
  • The final layer will consist of just plantains, a bit of leftover Ragu Traditional sauce and remaining cheese.

Cook Time and Serving:

  • Cook the dish in the oven at 350 degrees for about 10 minutes.
  • Slice like a lasagna, and enjoy!
